Sharp take on how the $120k cap recognizes what's already happening in the real economy. That tradeoff between expanding freedom and adding certification seems like classic regulatory compromise, but I dunno if training mandates actually improve outcomes for low-risk foods or just become another barrier. My cousin tried scaling a jam business last year and the old cap hit way fasterthan expected once farmers markets picked up. The clarity on approved foods mattersmore than folks realize.
